I have a griddle that stays on my stove top. I use it ALL THE TIME. When it gets dirty, I just hold it over my stove/sink and use a dry rag to brush all the crumbs off and put it back on my stove (I never cook meat on this pan. DH is vegetarian, I have other pans that meat gets cooked in on the rare occasion that I'm cooking meat). I have a huge cast iron frying pan, though, that gets washed with soap and water when I cook frittata in it (scrambled eggs always stick super bad, mostly to the sides). It gets dried in the warm oven so it doesn't rust, and it NEVER sits in water (my mom tried that when she was *helping* me when I had my first baby. Since then, I never let my cast iron sit around so company tries to clean it!). My DH has a griddle out on the cook stove, and he only ever cleans that with salt and paper towels and oil. So there you go, 3 different pans, 3 different methods of cleaning, but it works for us!
