If you're willing to bend the rules a bit, what about making dinner in double and triple batches? Extras can go in the fridge or freezer for upcoming meals. Like PP said, the crockpot might be your new best friend. I have a 6 qt pot that feeds all four of us soup for 3 nights easily.
Chili is a super easy one. Brown hamburger with onions and peppers (if your kids will eat them). While its cooking, dump a bunch of cans of various beans, and diced tomatoes into the crockpot. As soon as the meat is done, add it to the pot, cover and let it go. If you don't want to do canned beans, throw dry beans in a big container and cover them with water overnight. Let it simmer all day in the crockpot and adjust seasonings to taste.
