Another trick I use is salt, I add salt to cucumbers, tomatoes, beans, edamame and voila they are gobbled up.

DD loves hummus. I cook her veggies in chicken broth and it seems to depart enough flavor to her veggies that I don't need to add too much salt. Try terriyaki sauce or ranch dressing.
