Home made chicken nuggets.
I like to cut mine into bite size pieces, coat in egg and then dredge in Italian style bread crumbs mixed with parmesean cheese (about 1 cup bread crumbs to 1/4 cup parm). Lightly fry the pieces in coconut oil.
Server over spaghetti with red sauce, or use it for Chicken Fettuccine Alfredo.
Chicken and white bean chili.
Chicken Parmesan... coat in the bread crumb/cheese mixture above. Lightly pan fry in coconut oil until both sides are brown. Pour your red sauce into a baking dish and set chicken on top. Bake at 350 for about 30 minutes (until chicken is cooked through), lay pieces of mozzarella or provolone on top. Place back in the oven and turn the dial to broil, keep a close eye on it and broil until cheese is melty, bubbly and slightly brown. Serve with your favorite pasta.
