Slow cooker chicken chili
1 can corn
1 can black beans
1 can rotel (tomatoes)
1 packet dry ranch mix
1T chili powder
1T onion powder
2 frozen chicken breasts
1 pkg cream cheese (can substitute w plain Greek yogurt)
In crockpot add whole can of corn and rotel, drain black beans. Add ranch, chili powder, cumin, and onion powder. Mix. Add chicken breasts, make sure it is submerged.
Cook on low for 7 hours (half the time if cooked on high)
When done, shred chicken w fork.
Add cream cheese & stir until well mixed
This can be put over rice, although dh and I eat as is.
