I LOVE kale. My kids are not super-big veggie, eaters, but I can usually get them to eat kale. Our favorite way to eat it is in a make-ahead "fried rice."
Mix cooked brown rice, diced carrots, and smaller pieces of kale with olive oil (or canola if I'm out of olive) and garlic powder. I usually make a pretty big batch of this. Cook at 400 for 15 minutes, stirring once.
This mixture can be stored in the frig or freezer for a later meal. When you're ready to cook, heat olive oil in a larger pan. I like to saute eggs in the oil and then use my spatula to "cut" them into smaller pieces. You could also use meat, shrimp, or even nothing. Mix the rice mixture into pan. Add soy sauce and heat until warmed. Yummy.
