Or, garlic feta spread. Put about a cup of feta in the food processor with 1-2 cloves of garlic and a tablespoon of lemon juice. Start the food processor and slowly drizzle in olive oil until its soft and spreadable. Use as a dip with veggies, a spread on sandwiches or wraps, or on turkey burgers. Yummy!
ETA: ooh, or thaw a sheet of puff pastry and unroll it. Cover sheet with thawed chopped spinach and crumbled feta (add minced sun dried tomatoes too if you have them). Roll tightly like a cinnamon roll, wrap in plastic wrap and refrigerate an hour or two to firm up. Preheat oven to 375. Slice roll into 1/2 inch slices. Place slices on sheet pans and bake about 10 minutes until golden brown.
