I usually do spinach and everyone likes it. I've done cabbage before too. You could also do spinach/cabbage pie though they use less eggs. Sometimes I like the pies better, partly for that reason. More veggies, less eggs You can throw whatever you like in them pretty much. I've thrown in beans before and I also like to throw in sliced mushrooms. We also like to use parsley and dill, and either shredded regular onions or chopped green onions. I'm sure fennel would taste good too. Never tried freezing it though - I'm curious how that goes.
