Pectin- you can really just make jam or jelly, there are several jellies you can make from juice (grape or apple)
Rice flour - use anywhere you would use flour, to use it without telling use it to dredge meat or thicken gravy or make a roux. I just wouldn't use it in baked goods without xantham or guar gum to provide structure
