My kid is gluten free and lactose intolerant. He also gags on the texture of meat. :-/

Tonight for dinner I made polenta topped with vegan cheese shreds (though these have soy and I'm thinking of cutting it out too). Side of spinach sauteed with margerine and onions. Hubby and I also had chicken, kiddo had fruit.

Another meal I really enjoy is gluten-free pasta with green lentils, kale and caramelized onions. The key is to let the onions caramelize in lots of olive oil for at least 20 minutes.

For breakfast I usually make gluten-free oatmeal or an egg fried in olive oil, fruit on the side.
