Chili Mac Casserole
1 1/2 cups uncooked elbow macaroni
1 pound very lean ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 can (28 ounces) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (6oz) tomato paste
1 can (4oz) chopped green chiles
1-1/2 teaspoons salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
4oz 2% Monterey Jack cheese
4 oz 2% cheddar cheese
Cook macaroni according to package directions.
In a large nonstick skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain.
Stir in the tomatoes, beans, tomato paste, chiles and seasonings.
Drain macaroni; add to beef mixture.
Transfer to a 13x9x2in baking dish coated with nonstick spray.
Cover and bake at 375 degrees for 25- 30 minutes or until bubbly.
Uncover; sprinkle with cheese.
Bake 5- 8 minutes longer or until cheese is melted.
Makes 10 servings (about 1 1/4 cups) 6 points per serving
