Yummy Black Bean Soup!!
here's a recipe I just made....mmmmmm.....
2# dry black beans (soaked overnight, or bring to rapid boil for 2 minutes, cover and let sit for one hour, drain and rinse before using)
2 medium yellow onions, chopped
1 green pepper, choppped
4 cloves garlic, minced
1 can diced tomatos (petite diced are great)
1 can white corn
2 medium potatos, diced
salt and pepper
dash or two of cayenne pepper
1 smoked ham bone (optional if veg)
after prepping beans, cover with water, add rest of ingredients, simmer on low for 2-3 hours or longer.
Serve over brown rice or with bread.
(makes a VERY large batch, you could make half....or put extra in your freezer or share with a friend!)
