Check out the book Super Baby Food by Ruth Yaron for a lot of recipes using fruit juice concentrates. I've heard white grape juice concentrate is one of the best substitutes for sugar b/c it's clear and doesn't really have a distinct FRUIT specific taste.
Also, no matter what I'm baking, I always cut the sugar by half or more, and I have never had any problems with taste or texture. Most sweet recipes call for way too much sugar anyway.
