You could just make a rou sp? to substitute for thickness and then add seasonings.
Heat equal parts flour and a fat (butter, oil) in a pan until they turn a copper color then slowly add liqiud, soy milk in your case. heat untill bubbly beating with a wisk. Nice creamy sauce, you can add the cheese to that. general rule of thumb is one tbls of flour, one tbls oil, one cup o liquid.
