Ok - my fave:

One butternut squash, baked and blended in food processor with:

one can coconut milk (light)

Dump into a pot with some veg broth or water (3-4 cups), sauteed onion and garlic, some cumin and ginger (about 1/2 tsp of each? taste test for yourself). Can add: shreaded zucchini, shreaded carrots, chopped spinich/bok choy, etc. - the fewer big veggies in the pot the more my kids iwll eat of this. Even w/just the squash and basic veg, it's super healthy.

I add water, as needed - thicker if you're doing this with a hearty bread and salad, thinner for a nice light lunch or supper warm up.
