I just happened to season some for tomorrow.
I'm big on flavor, so I put tons of seasoning (plus, it helps me stop missing all the salt I used to eat back home )
I usually make a little marinade with whatevers lying around:
Then I put it in a glass pan with raw onion slices and potatos cut into forths (or smaller, depending on the size of the potato).
Let it sit in the fridge overnight, then bake the next day.
I usually do a quick blast at 400, uncovered first for 10 mins to seal in the juice. Then let it sit at 350 for about 30-50 mins, depending on thickness of chops. I like to have it covered to avoid losing too much of the juice, but then uncover it again at the end to give it a little crisp.
Time consuming, I know, but dh loves them that way.
I serve it with rice and beans and steamed veggies (can you tell I'm Latina )
Or for a light meal, I leave out the rice and/or beans and just serve with veggies and applesauce, but my mother would freak if she saw that. lol.
