You could always freeze them for later use. You can leave them peeled or unpeel them and freeze them whole or cut up.
Or how about adding them to smoothies or making frozen banana pops.
I make a banana rice dish: cook 2 1/2 c. brown rice, add 3 bananas. Make sauce: mix 1/4 c. ww flour, 2 1/2 c. milk, 1/4 c. cheese, boil and heat until melted. Layer rice and sauce in casserole dish. Bake at 350 for 1/2 hr or microwave 8 min.
Also waldorf salad: 2-3 apples (chopped), 2-3 bananas (chopped), 2-3 T. each mayo, maple syrup, and peanut butter. Mix together.
