Sometimes people/kids with dairy allergies are also sensitive to soy - but I find rice milk a nice alternative! I had to give up all dairy during my last pregnancy (caused high blood pressure due to a pre-pregnancy "sensitivity"!) and this was my favorite meal: Spicy Veg. Peanut Noodles

2/3 c. creamy peanut butter
1 Tbsp. sesame oil
1/3 c. red wine vinegar
1 Tbsp. red chile flakes
1 Tbsp. sugar (or sugar substitute)
1 Tbsp. dijon mustanr
1 Tbsp. ground coriander
2 Tbsp. soy sauce
1/2 c. canola oil
1 lb. spaghetti
1 English cucumber, halved and sliced (I usually use diced celery because I am not a cucumber fan)
1 red bell pepper - sliced or cubed
1 bunch scallions - sliced
1/2 c. chopped peanuts (optional - but if you skip these, add a little salt to taste!)

Combine all ingred. except pasta, veggies and peanuts in a large bowl. Whisk until smooth. Set aside. Prepare pasta and drain. While pasta is hot, pour sauce over spaghetti and toss to coat. Toss in veggies and garnish with peanuts. Serve chilled or at room temp.
