*stir fry veggies with rice and chick peas for protein.
*flour tortillas (corn or wheat--costco has dairyfree in the refrigerated section--not cooked yet) with beans, veggies, avocado, etc.
*split pea soup with frozen mixed veggies in it.
*fruit crisp with oats, coconut, etc on top.
*oven roasted potatoes with olive oil/rosemary on them.
*potato/kale/broccoli soup (thicken with corn flour/nutritional yeast to be "cheesy")
*mashed butternut squash mixed with corn.
*lentil/oat veggie burgers (pair with guacamole as a sauce to boost nutrition)
