I just soak my beans overnight in water. In the morning, I take the beans and drain them put em in the crock pot with the ham hock and cover with about 1.5 inches of water above the beans. I slow cook that all day for 10 hrs. About 9 hrs into it, I remove the meat from the bone (normally it's just falling off at this point.) Then serve about an hr later.
We like it served with corn bread and some ketchup. YUMMY!!!!
