grits, cornmeal, cornbread (make it yourself--use ricemilk or other sub for milk), plain corn tortillas (use masa and a tortilla press for the least additives), sweet potatoes, squash/pumpkins (and their seeds--yummy roasted!), white, brown and wild rices, millet, quinoa, amaranth, teff (similar grain).
you shouldn't use barley, it has gluten as it is a close relative to wheat--same with oats, kamut, rye and triticale.
some meal ideas:
chili with baked potatoes
stir fry with rice (use a wheat-free tamari such as San-J has) and your choice of meat
split pea soup
potato/veggies roasted with your choice of meat
corn tortilla-based enchiladas or tacos
hot cereal (such as quinoa) with eggs and fresh fruit
quinoa or brown rice pasta with your choice of veggies/meat in the sauce
