Someone was talking about Rotel tomatoes on another thread, and I realized that this meal I always make is definitely around 5 bucks or less. This is great if you have a big cast iron skillet.
Black bean cornbread skillet:
Saute 1 onion in 12" cast iron skillet with butter or oil until carmelized. Turn off heat and add:
1 can black beans
1 can ro-tel (or tomatoes with green chilies)
1/2 bag frozen sweet corn, or a can of corn
Chili powder to your family's taste
(I also add either cilantro or green onions here if I have them around)
Top with 1 recipe cornbread batter. I usually make homemade (cheaper and healthier) but you could use your favorite box mix too. Bake until bread on top is done and golden, about 30 minutes for my recipe. Sometimes I will grate cheese on top halfway through baking to make it extra yummy.
A one dish (plus bowl to mix up cornbread) meal that is kind of like a Southwest flavored pot pie!
