Blueberry Buckle
Makes 9 Servings
Batter
3/4 cup granulated sugar
1/2 cup Butter
1 egg
3/4 cup milk
1/2 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups fresh blueberries
Topping
1/2 cup firmly packed brown sugar
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 cup Butter
2 teaspoons milk
1 teaspoon vanilla
Heat oven to 375ºF. Grease 9-inch square pan with Butter.
For batter, combine granulated sugar and 1/2 cup Butter in
large bowl. Beat at medium speed of electric mixer until well blended. Add
egg.
Beat until well blended.
Combine 3/4 cup milk and 1/2 teaspoon vanilla. Combine 2 cups flour, baking
powder and 1/2 teaspoon salt. Add to creamed mixture alternately with liquid
using low speed of electric mixer. Fold in blueberries. Spread in pan.
For topping, combine brown sugar, 1/2 cup flour and 1/2 teaspoon salt. Cut
in 1/4 cup Butter Flavor Crisco with pastry blender (or 2 knives) until
flour
is blended to form coarse crumbs. Combine 2 teaspoons milk and 1 teaspoon
vanilla. Drizzle over flour mixture, tossing with fork. Crumble over batter.
Bake at 375ºF for 45 minutes or until toothpick inserted in center comes out
clean. Serve warm or at room temperature
