Zucchini Cakes
4 c grated zucc
1 Tbs sea salt
4 eggs
1 small onion, finely chopped
2 cups bread crumbs
1/4 tsp cayenne (opt.)
1/2 c parmesan cheese
4 Tbs butter
4 Tbs olive oil
Mix zucc with salt and let stand 1/2 hour. Rinse well and squeeze dry in a tea towel. Mix with eggs, onion, bread crumbs, cheese, cayenne, and season with salt and pepper. Form into cakes and saute a few at a time in butter and oil.
