Definitely cheese! I've made paneer (an indian cheese which is kinda like mozzerella) YUM! I was thinkin' soups - yogurt like everyone said. I wonder if you could make ice cream or frozen yogurt - I would think that would keep longer also!
Also - I've heard many people who can't tolerate cow's milk are alright with goat's milk, but I don't know if WIC would cover it.
