Easy Chicken and Rice Soup
Cook chopped onion, 2 chopped carrots and 2 chopped celery stalks in a tablespoon of oil over medium to medium low heat until the vegetables start to soften (about 10-15 minutes). Add 2-3 chopped garlic cloves and cook another minute. Add 1 - 2 cups of leftover chicken and a pinch of salt and pepper. Add 4 cups of chicken broth and bring to a simmer. Add 1/4 to 1/3 cup of rice (I use a long grain/wild rice mix). Cover and put into preheated oven (350 degrees) and simmer in oven for an hour.
This doesn't take much prep time and is yummy! I don't do difficult recipes but we cook from scratch. I'm actually making this now You can also add 1/2 c of pasta or egg noodles instead of the rice if you prefer but add them in the last 20 minutes of cooking.
