Macaroni and Cheese (no bake).
I start boiling water and getting stuff ready for the cheese sauce. Once the water's boiling and I add a pound of noodles, I start cooking the sauce.
Melt 2T butter, then add 2T flour, 1/4 t ground mustard, 1/4 t pepper, and 1/2 t salt (it might need more salt and pepper but I'd start there) and stir everything until it's all bubbly. Slowly add and stir 1c milk. I try to do it slow enough that it thickens as I go, but I get impatient towards the end. Stir off and on until it starts to boil, then stir continuously for one minute. Turn off the heat and add a generous amount of shredded sharp cheddar cheese (medium tastes bland). Maybe about a cup. Stir and add to drained, unrinsed noodles. Total time, about 15 minutes. Feeds the four of us once.
I just got this from a friend (we've had it at her house and it's fantastic!), and what I think I will be doing is making a blend of the dry ingredients for us to scoop from quickly (and so that DH will actually consider making it).
