Yes. Though I would recommend using paper liners. Pop them in the oven frozen, and bake until they are done (you'll know by how they look). I did this at a cafe I worked in. You can do the same with banana bread in a metal loaf pan (though we always thawed those out before baking). And with scones we portioned them onto a parchment lined pan sprayed with cooking spray into the freezer and cooked them frozen too.
