A little trick I learned while working in a bakery...make your cookie dough the night before (or a few hours before), put it in the fridge, then scoop it out cold and put them right in the oven. They don't spread as much when they're cold to begin with (which is the same reason why the microwave-melted butter makes them spread more too). I use the oatmeal cookie recipe right off the Quaker Oats container and they turn out great. I usually make a full batch, scoop them out with a small scoop, put them in the freezer, and then just take a few out whenever we want them. I also soak my raisins in hot water before adding them to the dough, which adds moisture. You can also add flaxseed, wheat germ, or nuts to the recipe. Hope this helps ya
