Funny,
I just made a batch of oatmeal raisin cookies today... they didn't flatten. I use the recipe on the back of the Robin Hood quick oats. I used margarine. I also mix my stuff by hand, not an electric mixer, maybe that helps? Do you want the recipe? I'll just give it to you right now.
3/4cup butter or margarine softened
3/4 cup lightly packed brown sugar
1/2 cup white sugar (I don't quite use this much)
1 egg
2tbsp water
2tbsps vanilla
3/4 cup flour
3/4 tsp baking soad
1tsp cinnamon
3 cups of quick oats
1 1/2 cups of raisins.

Cream by hand butter, and sugar until smooth. Add egg, water and vanilla and mix well. In a separate bowl combine the dry ingredients.
Mix the dry into the wet a bit at a time (makes it easier to stir).

Drop (don't roll into balls) a heaping tbsp of batter onto cookie sheets (I didn't need to grease mine). Should make about 30 cookies, although I never yeild as many as the recipe says.
Good luck! You can substitute the raisins for 1 cup of chocolate chips if you want.
I've made this recipe twice in the past two weeks and its worked both times. NO flat ones. BYE!
