tried making tater tots tonight... massive fail! LOL, the potatoes were so sticky but wouldn't form balls so it ended up being fried hashbrowns
My chicken fingers worked out well though, which they usually do so I"ll share that recipe:

boneless skinless chicken breast (partially frozen makes them easy to cut) cut into strips

roll in whole wheat flour
dip in egg, whisked with some water
roll in bread crumb mixture: bread crumbs, milled flaxseed, oatbran, dip mix (I used epicure's herb and garlic)

place on a greased cookie sheet and bake at 375... now I don't measure, so I just eyeball the crumb mixture and the cooking time I just keep an eye on them until they're done not very specific I know! It's probably around 20 mins.

It's also yummy to add ground almonds to the breading mixture and cut back on the bread crumbs.

We serve ours with dip or honey mustard and have dippable veggies on the side! yummmmo
