You could also try baking with coconut flour. It tends to use a lot of eggs although it's been a lot of trail and error to find recipes that we like. I tried a plantain brownie recipe recently, though that even my husband liked thanks to Sakari! Here's the recipe: (I didn't add choc. chips - it is more like a cake I find, but was still good.)

LO's and I also like coconut flour pancakes (they use a lot of eggs) and could be frozen. We don't find them like "real" pancakes though - my husband likes them sometimes but not usually that much. They're very filling too. I've also made a coconut flour bread that uses 6 eggs...again, LO's and I liked, but it's not quite like "real" bread. It could also be frozen.
