Anyone used Agave in canning jams and jellies?
Strawberries are getting ripe here, and I'd love to make some jam again this summer. But I hate how much sugar there is in it. I was considering trying to substitute Agave instead, and I was wondering if anyone had tried that, and if so how it turned out?

I haven't tried it, but it sounds very appealing. I agree that there's just too much sugar in jelly/jam.

There is new fruit pectin out now that uses apple or white grape juice instead of sugar. Mine turned out great! suregel makes it.

Ooh, I like the apple juice idea! Is that something you can get at WalMart or regular grocery stores?

I wonder if you can use this in freezer jam.... I'd love to make some without all of the sugar.

I was planning on trying this too.
I found this one: Agave Strawberry Jam Recipe http://www.honormyhealth.com/2010/05/20/agave-jam/ Here is a pectin that you can use regardless of the amount of sweetener you use: http://www.pomonapectin.com/ Their recipes: http://www.pomonapectin.com/card1.pdf http://www.pomonapectin.com/pr2_a.gif http://www.pomonapectin.com/pr2_b.gif http://www.pomonapectin.com/card2.pdf |

Re: Anyone used Agave in canning jams and jellies?
We do NOT use Agave . Agave is not raw it is heated and made the same way HFCS is.
Agave nectar is in reality not a natural sweetener but a highly refined form of fructose, more concentrated than the high fructose corn syrup used in sodas! There are many articles about it if you google it. |
