Kimchi help please
Anyone have any tips/tricks? I have been putting off making it due to fear
but we love it so I want to give it a try. I want to try out THIS recipe, anyone have any comments on it?

Yum! I want to try making it, but have no tips since we usually buy it at the Korean market or someone makes it for us. You may try masngchi.com, she posts ciders of her recipes... The only thing is now I might not be able to eat it...ds2 is allergic to shellfish; I didn't realize some might be used in kimchi! :/

I fail miserably when trying to make 포기김치. Can only do a halfway decent job when I slice up the cabbage before brining. If you've never made it before.. please keep expectations low for the turnout. It's truly an art that takes years to master. Have you tried 깍두기 (radish kimchi)? Much easier than cabbage kimchi.. usually it turns out edible no matter what. I find that there's no substitute for an experienced hand helping you right there in the kitchen - is your mother or mother-in-law nearby? Good luck!

Aha *i am not Korean. But hubby was born and raised in Korea. My mil is a principle at an all girls school, so she doesn't have much time to cook... Her kimchi wasn't so good!!

DH and I are not Korean, but dh was stationed in Korea for a year, and our youngest daughter is adopted from Korea, so I have been trying and trying and trying to get my recipes right. My two suggestions:
1. Make oy sobegi (cucumber) kimchi first, it's really easy, and you don't have to let it set and ferment if you don't want to. We make this a few times a week. 2. Start going to a Korean restaurant that you like OFTEN. Become friends with the owner, and after you build that relationship, ask them for their advice. We used to go to one restaurant once a week for a long time, and the woman who owned it (she was a Korean who married a GI and came to America) fell in love with dd, and would let dd call her Halmoni (grandmother), anyway, when they retired, she told me her family recipe for bulgogi because she wanted dd to have real authentic Korean food. Made all the difference in my cooking.
