Bean based main dishes?
Meat is very expensive and I would really like to move to more grass-fed meats. That being said I think we're going to need to eat something other than meat for dinner maybe 2-3 times a week. I'm trying to keep my carbs down, so that means less pasta and I feel like the only thing that leaves is BEANS!

I know we try and eat meatless every Monday. And usually we end up eating meatless 2 or 3 times a week. More because meat is expensive. Hubby & I are also trying to lose weight.
My whole family {including picky eaters} love skinnytaste.com's Fagioli Pasta . It's delicious. We always sprinkle Parmesan on top. I don't know if the Carbs aspect would work for you. You could also save a bit on the meat by doing meat dishes that substitute beans for some of the meat. We make chili a lot which uses kidney beans, and I just started making a meatloaf that uses kidney beans... yum! Also, you could look up rice and lentil casseroles, and you could do a stirfry with garbanzo beans (chickpeas) instead of meat. Black bean soup is also filling enough for a meal
I've been doing a lot of experimenting with beans lately since I've been wanting to use more beans too, just for the healthiness aspect!

We love black beans here. We eat them over rice a lot, which wouldn't work low carb, but we also eat them in tortillas. I know they sell low carb tortillas. Or with some lettuce, cheese, tomatoes and guac just on top of the beans would be good too.
