S/O Enchiladas
I have never had these but the other thread got me craving some mexican food. I tried searching around online but there are literally a kabillion recipes and they are all diffrent. Help a mama out please. Links and recipes GREATLY appreciated. Sides like beans and rice also very welcome.

OMGosh! Enchiladas are my fave!!! I do a more americanized version, I think, but boy are they yummy! Here is my recipe, keep in mind I do this by eye so I'm guestimating a bit here.
A small can of red enchilada sauce (8oz maybe) 1 whole bnls/sknls chik breast Package of flour or corn tortillas Large container of sour cream (+ more for garnishing) Bl. Olives Fresh cilantro Cheddar cheese, shredded Diced garlic Olive oil Spices- S&P, cilantro, garlic powder, onion powder Pre-heat oven to 375. Dice chicken into sm. pieces and cook on olive oil and garlic. pour about 1/2 can of enchilada sauce in bottom of a glass baking dish, I use a 9x13. Put cooked chik in a bowl and add; a handful of diced cilantro, about 1/2 tsp of the rest of the seasonings, 1/4 cup or so of cheddar chz, 3/4-1 container of sour cream, diced bl. olives if you use them Mix all together and scoop into middle of tortilla, roll up and place in pan. When the pan is full of tortilla/chicken mix pour the remaining enchilada sauce, to taste, over the top and cover with additional cheddar chz. Bake for apx 30 minutes, uncovered. I sometimes broil on low at the end to get the cheese a wee bit browned on top. Enjoy! ETA: Some people boil the chik breast and shred instead of cooking on the stove. I just prefer to cook in oo and garlic first.

Thank you. Now we are getting somewhere. I was seeing creamy or with red sauce but you have a nice combo. MMMMMMmmmmm I am hungry.

I know my chicken one by heart...but I'd have to look up the beef one for the exact amounts of stuff. These are my FAVORITE enchilada recipes!!
Chicken Enchiladas Meat Cubed chicken, canned chicken, pulled pork (all of these taste good) Sauce 16 oz sour cream Cream of *something* soup (I use homemade but any variety of canned works) half jar salsa *milk - sometimes needed to thin...depending on salsa Mix the sauce well and spread a thin layer on the bottom of the pan (keeps tortillas from sticking). Each tortilla spread meat, a large spoonful of sauce, top with a handful of cheese, roll, place in pan. Repeat until pan is full. Pour/spread remaining sauce over tops of rolled tortillas. Sprinkle cheese on top (I use almost 2 cups but we LOVE cheese). Bake at 350 for 20ish minutes. Beef (I can't remember EXACT measurements...I'll check at home) Meat (I've used ground beef, ground turkey, leftover roast, sliced steak) Onions (sautee these first, then cook meat if needed) Sauce 1 large can tomato sauce (can use homemade) 1/2 stick melted butter dash tabasco sauce (season to taste) In same manner as chicken enchiladas assemble the enchiladas and bake for 20 minutes or until cheese is melted and bubbly.

This is really good spanish rich- it makes a lot, but it also freezes really well. I never follow a recipe for enchiladas. It's basically like lasagna, just pick ingredients you like and layer btw corn tortillas and chile sauce and cheese. I'm vegetarian, so my fav enchilada to do is one layer of potato and spinach and one layer of beans. You can buy a pre-made sauce (red or green) or you can make your own and get more creative.

I am mexican. I'm very picky about mexican food. The recipe for chicken enchiladas that I share with others is
