UPDATE ~ Pancakes...here we go...

I have 8.5 cups of milk that went bad out of the last gallon thanks to STBXH not taking his lunch regularly

So what do I do with it?... PANCAKES...

I'm doing plain pancakes, pumpkin pancakes, and any other pancakes I can come up with to use up this batter. I don't even own a bowl big enough to mix the base, so I had to go find a food safe bucket to be able to mix it.

This will probably take a while...

UPDATE



After several days I finally finished (I had to take breaks because I can't stand in front of the stove for very long) I ended up making the batter in a cooler because my bucket didn't work out. I ended up with 239 pancakes (2"-4" across)

So the bucket I wanted to use didn't work out so well and I had to mix this up in a cooler

I've made it part way through the batter and have 72 pancakes so far. I have 12 cups of batter left... man, this takes forever...

3 tsp baking powder
1/2 tsp salt
1 c milk
1 tbs sugar
1 egg

Mix it all up.....some lumps are ok....and cook like the instant kind.

You can mix all the dry ingredients ahead of time a large jar (i use old mayo ones, lol) and then just add the wet ingredients and shake to mix when u want to cook them! I always have 3 to 4 jars of the premixed dry ingredients ready to go!

That is GENIUS! Totally doing this! It never occurred to me to put the dry ingredients in a "shakeable" container!

I didn't even think about using those jars to shake. I guess I have a use for my mason jars now.

How about muffins or other quick breads?
I would go to allrecipes.com and do an ingredient search for sour milk or buttermilk.
