Grilled chicken and orzo-What can I make with it for dinner?

I am feeling very uncreative when it comes to dinner these days! I know we have lots of creative ladies here that might be able to help me out. I grilled some chicken breasts already for DH's dinner before he leaves for work this afternoon so those are done. I have a box of orzo that I am looking to use as well. My pantry is pretty stocked so i dont feel that I will need to shop for anything. Ok ladies anyone up for playing? I am desperate!

Re: Grilled chicken and orzo-What can I make with it for dinner?

I ended up searching all recipes with ingredients chicken and orzo. This is the recipe I made

Garlic Chicken and Orzo Noodles serving for 4

1 cup uncooked orzo pasta
2 tablespoons olive oil
2 cloves garlic
1/4 teaspoon crushed red pepper
2 skinless, boneless chicken breast halves - cut into bite-size pieces
salt to taste
1 tablespoon chopped fresh parsley
2 cups fresh spinach leaves
grated Parmesan cheese for topping

Directions

Bring a large pot of lightly salted water to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, and drain.
Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown. Stir in chicken, season with salt, and cook 2 to 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

I used the grilled chicken instead of saute in the pan. I just added it for reheating after garlic was ready since I grilled it earlier in the afternoon. Also I added a can of garbanzo beans. It was really good any really easy plus a bonus that all 3 kids ate it and liked it!

COLD CHICKEN AND ORZO SALAD!!!

Shred up your already cooked chicken, Toss it with cooked and slightly cooled Orzo, Fresh Peas any other Veggies you want and a Home made Citrus Vinegrette makes for a Large portion.....

1/2c olive oil
Juice of an Orange (or 2 lemons if you prefer)
1tblspoon Soy sauce
Splash of Worchestire sauce
2 tsp Granulated Garlic
1tsp prepared Mustard
1tsp Pepper

Place it in a small sealable jar and SHAKE the crud out of it. Pour over your Orzo veggie chicken mix and your done, the orzo will absorb the Flavor of the sauce andWont leave anything greasy
