Zucchini Freezing

A friend of a friend told me that grate and freeze zucchini---does anyone else do this?? Any tricks or tips I need to know.

I've never done that but I do slice it thin and freeze it that way.

I have done it, I think it's best if you save it only for using in baked dishes where it's pretty much going to dissolve. It loses a lot of volume and gets really soggy. You will need to drain it in a colander for a couple hours after defrosting it. Do-able, but not ideal. Shredded is ok, chopped no way. It turns to mush in the middles and the skin is rubbery. I try to avoid doing it at all costs. I'd rather do a zucchini bread bake a thon.

I alway ado this. I shred it and package it in 2 cup ziplock bag packages, because that's how much I need for my muffin recipe. It works great.

I only ever use frozen zucchini for bread too, but after grating I press out the water in a strainer before freezing. Don't know if it makes a difference to do it before vs after freezing, it's just how I've always done it.

I don't do anything to remover the liquid, it just all goes in to the muffins. I figure it would have gone in had unused it fresh. Maybe my recipes just accommodates the extra liquid well, but I've never has an issue.

I freeze it a couple different way (cut in wide lasagna noodles, julienne style, etc) for different dishes like vegetable lasagna or a stir fry. We love zucchini here and plant several plants every year.

We also grate and freeze, pressing the excess liquid beforehand. I use it in zucchini bread and in veggie and tomato sauce for pasta.
