Cupcake frosting recipe
I need a simple yet yummy frosting recipe. DD has to bring a "yellow" treat tomorrow for her preschool. I plan on making cupcakes but want a good frosting recipe...

Easiest way to do it is cream unsalted butter in a stand mixer and then add powdered sugar and beat till it's spreadable. A bit of vanilla and a pinch of salt are good, and for yellow I guess you'll want a bit of food coloring, too.
Recipes that call for powdered sugar by the cup are usually off--you'll need more than the recipe says--and anyway it's a PITA to measure. Much easier to add till it's thick.

Does it have to be yellow? If not, I'd make chocolate ganache. It doesn't get much easier than this:
16 oz bittersweet chocolate pieces 16 oz heavy cream Heat heavy cream til frothy, pour over chocolate, let stand 2 minutes then combine thoroughly. Bring to a touch cooler than room temp then whip it into a frosting. People will be amazed at how delicious it is.
