HELP IMMEDIATELY PLEASE! Dh bought the wrong wine for the recipe, will it still work?
Need cooking help fast. DH bought me the wrong cooking wine! Will what he bought still work? The recipe: Poach pears in WHITE wine, mash the pears with sweet potatoes, evaporated milk, butter, brown sugar, cinnamon and nutmeg. DH bought me SHERRY cooking wine instead of WHITE cooking wine. Will it ruin the dish if I use she Sherry? Or do I need a plan B? So frustrated. I texted him EXACTLY what I needed, because he insisted on being helpful. *sigh*. He's not home right now, and of course he left his cell here, so I can't have him pick some up. We have to leave in about an hour. No time to go to the store.... ARGH!

Don't use the sherry. It would turn out better if you omit the wine rather than use the wrong one.

If it was labeled cooking wine, then it is salted and not suitable for poaching anyway. Sherry is also a fortified wine, which means it has a distilled alcohol added to it (usually grape brandy), so it's flavor would be stronger than white wine. In your recipe, probably a mix of white grape juice or apple juice and the sherry using a little more juice than sherry maybe even as much as 2/3 juice, 1/3 sherry could have worked out ok. I'm sorry. I know it's too little too late. My DH does this to me too or he'll try to "help" me while I'm in the middle of cooking something and I'll have to either change what I was making or "fix" it. It can be so annoying sometimes, but if I complain he would just refuse to ever help ever again. So there's really not much choice. Anyway... I hope you figured something out.

Don't buy "cooking wine". If it is not fit to drink you don't want to cook with it. It doesn't taste nearly as good as real wine and you can buy Barefoot for under $10 a bottle and cook with them just fine.

Only use cooking wine if it is specified in the recipe.
I agree with the above- sub in juice and def. not sherry. Trader Joes three buck chuck makes a suitable wine for recipes. And cheaper than most tiny bottles of cooking wine.

You can always sub chicken broth for white wine. I'm sure this is too late to help last night's dinner, but just for future info.
