HAM AND SCALLOPED POTATOES

6 to 8 slices ham
8 to 10 med. potatoes, peeled & sliced thinly
2 onions, peeled & thinly sliced
Salt (to taste)
Pepper (to taste)
1 c. Cheddar cheese, grated
1 (10 oz.) can cream of celery or mushroom soup
Paprika

Put half of ham, potatoes and onions in crock pot. Sprinkle with salt and pepper, then grated cheese. Repeat with remaining half. Spoon undiluted soup over top. Sprinkle with paprika. Cover and cook on low, 8 to 10 hours; high, 4 hours

Oh this sounds so good.....now if I could find a way to replace the cream soup and cheese (no dairy for me)

I can get cheddar flavored rice cheese....anyone know of a non-dairy cream soup?
