Re: Who posted about the spinach nuggets?

I don't have it sitting in front of me, but it's super easy..

2 10oz packages of frozen spinach
3tbsp of butter (I added approx 1 tsp more than this)
1 c. bread crumbs
1 c. parmesan
2 eggs, beaten

Cook spinach as package directs. Drain & squeeze. Add butter and I don't remember the wording, but allow it to melt (I put the butter in the bowl and put the spinach on top..didn't take long to melt ). Mix. Add bread crumbs, parmesan, and eggs. Mix again Preheat oven to 375. Shape into balls and distribute on cookie sheet. Smush to make nugget looking blobs Personally, I just patted it out in my hand like a hamburger (except small like a cookie) and placed on the cookie sheet. Bake for 10-12 min.

The person who posted orginally said that it made like 20, but I came out with a bit more than that...I guess I probably made them smaller. She also added that she freezes them and reheats them a few at a time for her child. These were seriously a huge hit with my boys. Awesome finger food.

I'm making those tonight! Is it something my DH might be willing to eat or more of a Mommy and Kiddos lunch food. If so, I'll just make it tomorrow.
