?? for those that mill their own flour...
What is the difference between hard red wheat berries and soft wheat berries? I have never made my own flour but I want to and these are the two types of wheat I can buy localy to mill. I have no idea what the difference is

There's red wheat and white wheat. White wheat is still whole wheat, but much milder in flavor than red.
Hard wheat has much more gluten than soft wheat. Hard wheat is good for bread, soft wheat is good for cakes or any other pastry. Then there's also winter and spring wheat. Spring wheat has a bit more protein (aka gluten) than winter wheat. So, the 'most' glutenous flour would be Spring hard wheat, with the softest being winter soft wheat. Ami
