I made these potato pancakes before I went vegan when I just vegetarian. They were amazing!! My friend who is veg also came over and said that they were the best thing that she had eaten in a month. LOL! I also made the veg stew and it was delicious as well.

I've seen vegan latke recipes, but the ones I tried awhile ago weren't the best.

For the original poster, you could probably just google "latke recipe" and find something!
