Homemade cheese?

After seeing the thread on here about homemade yogurt, I tried it, and it's yummy, and I thought about trying to make homemade cheese. Anybody do that? Any tips or favourite recipes? Thanks

I haven't tried cheese, but if you read Animal, Vegetable, Miracle by B. Kingsolver, this is the recipe they use.

def. cheesemaking.com. Do mozzerella first. It's the easiest.

I actually did this yesterday: though with regular pasteurized milk and not organic, and put it on whole wheat pasta. It was so yummy and looked/tasted like Ricotta but better! Guess we won't be buying Ricotta anymore, which is nice b/c it is usually expensive so we usually only get it when it's on sale! Just have to figure out what to do with the leftover whey. I put some in mashed potatoes yesterday.

eta: the cheesemaking site is interesting. I guess the milk we used was ultra pasteurized. http://www.cheesemaking.com/store/pg/124.html I've been trying to find unpasteurized milk but apparently it is illegal in my state!

I borrowed a cookbook from the local library with a title that was something about 'uncheese' and it was all dairy free 'cheese'... sauces, solids, semi-softs. Everything I tried (of those recipes that were also nut and soy free, due to allergies) were great!
