Re: scalloped potatoes

4 cups sliced raw potatoes
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons flour
2 tablespoons finely chopped onion
8 ounces shredded sharp Cheddar cheese
2 tablespoons butter
2 cups milk

melt the butter and saute the onion in butter
add flour to make a roux, cook a couple minutes until the butter browns
add milk and cheese
cook and stir constantly until thickened

place 1/2 of the potatoes in a greased 9 x 13 pan
pour 1/2 of the milk/cheese mixture on the potatoes and repeat layers

Bake covered at 350 degrees for 40 minutes. Remove cover and bake another 10 minutes to brown up the top.

Inexpensive and totally creamy and yummy! Don't miss the cheese at all.

Re: scalloped potatoes

If I want to make "lazy" ones I just slice the potatoes and put them glass containers with a lid. Add in onions, butter/ margarine, salt and pepper. Cook 3/4 of the way in the microwave (6-8 minutes stirring every couple minutes). Add in 3/4-1 can of mushroom soup, sir and finish cooking (maybe 5 more minutes)
