Memorial Day Side Recipes Needed

I'm starting to get my coupons all ready and starting to plan for this weekends BBQ for memorial day. But I need some great ideas for unique impressive sides.

I would like to do the following but I need some "fresh" ideas for the sides:

1) Regular side salad - this doesn't need anything fresh about it

2) Potato salad... does anyone have any recipes for something unique or something a little different then the regular potato salad

3) Macaroni salad ... I used to have an awesome recipe for a chicken penne pasta salad that had spinach and peppers in it, top with gorgonzola cheese but now I can't find it.

4) Greek tomato and cucumber salad or something similar. DH can not digest lettuce so something unique without lettuce would be great.
