Recipes for tomatoes...

So our family went to play at a friend's house yesterday and she loaded us up with some homegrown tomatoes... big, red ones and tiny little yellow ones. My husband nor I care for tomatoes (I felt bad telling her that), but don't mind tomato sauce, salsa, etc. Anyone have any recipes for how to use these? I hate for them to go to waste.

SUPER simple and tasty

Sauted shrimp with Tomato basil and Mozzerella over Pasta

1clove garlic Crushed
1Shallot Minced (1/2 small white onion will work too)
1/2C Fresh Basil
1/2C cherry or Grape tomato
1/4C Olive Oil
1lb Bocinchino Mozzarella (fresh baby mozzarella in fridge section in brined water) (optional)
1Lb Pasta
1/8Tsp Crushed red pepper flakes
Salt and Pepper to taste

**Cook your pasta to aldente set it aside

*Heat your olive oil to Med High add your shallot Then Garlic Then Red Pepper flake cook until tender then
* add your tomatos cook until they are tender and begin to Burst
*add Shrimp cook till Pink . Salt and Pepper to taste
*Turn off the heat add Halved cheese balls at this point then your Thinly sliced Basil then drain your pasta Toss in and your done

Roast them!!!! Cut the little ones in half and the big ones in slices. Drizzle olive oil, salt, fresh cracked pepper and some smashed garlic cloves over the tomatoes. And bake at 300F for about an hour, or until the edges begin to carmelize and turn brown. Then I put it in a bowl, take out any big tomato skin pieces and puree/blend. It makes the most amazing sauce! Roasting the tomatoes brings out a totally different flavor!

2 Ripe avocados, diced
2-4 toms
some chopped cilantro
juice of 1-2 limes
1 sweet onion, diced
1 red or orange bell pepper, diced
1 minced clove of garlic
Jalapeno pepper, optional, to taste

A yummy fresh salsa...enjoy!

they both sound yummy to me too... i dont much like the texture of tomatoes, but im growing them anyway. the first few we had i added to my spaghetti sauce
