Re: Anyone else make their own "convenience" food and freeze it?
these are some great ideas. I do waffles, pancakes, biscuits, french toast sticks - but haven't tried a bunch of others. I HAVE tried the pbj uncrustables because I have one of those round pocket sandwich maker things from PC. They were kinda stale and dry. I even used white bread. So those were a flop.

Re: Anyone else make their own "convenience" food and freeze it?
Oohhh I'm SO glad I looked at this thread! I've fallen off the freezer wagon, and we even have a big deep freezer! I'm hopping back on and making some things soon. Hubbie's fave is egg mcmuffins with Canadian bacon and egg whites on whole wheat English muffins. Ds loves pizzas made with the same muffins, pizza sauce and cheese melted on top. Yum.
And the cookie dough? Oh my, I'm not sure any of it would make it to the oven!! |

We eat a lot of eggs. I'm not fond of pre-cooking them unless hard boiled. But, I do scones, breads etc.
I love these books! http://www.amazon.ca/Dont-Panic-Dinn.../dp/0800730550 http://www.amazon.com/exec/obidos/re.../dp/0800733177

Yes! So funny! I'm not sure why I forgot about coconut oil- we depend on it! We've been out of it and I've been waiting for it to go on sale so I guess that's why it slipped my mind but I bought more this morning thinking exactly that it's what I will use for the granola bars! Thanks!

Re: Anyone else make their own "convenience" food and freeze it?
I love to make our own poptarts - I usually double or triple the recipe so the dough rolling is worth my time. I bake them, freeze them and then pop them in the toaster oven when we need a quick breakfast. I usually use whole wheat flour, add a little milled flax to the dough (sometimes in place of some of the fat) and use a no sugar added jam - super yummy!!
Poptarts 1 1/2 cups flour 1/2 teaspoon salt 1 teaspoon sugar 1/2 cup Crisco - I tried once using Canola oil and I just used less and it turned out fine 3 tbsp. cold water 1/4 cup jam (your favorite) 1/2 cup powdered sugar 2 teaspoons water Mix the flour, salt, sugar, and shortening together until the mixture is "sandy". Gradually add the water and stir, until a pliable dough forms. Don't be afraid to use your hands! Roll out the dough, and cut it into rectangles of your desired size. Think of each rectangle as an open book. Add 2 teaspoons of jam to each rectangle, and folded it in half (closing the book). Press the edges together. Use the fork to poke a few holes in the poptart shell. I baked them for 12 minutes at 450F. Mix powdered sugar with a little bit of water gradually until it is icing consistency (you can add a few drops of flavored extract if you'd like) and frost the poptarts. I got this recipe from www.hellagranola.blogspot.com |

I also pre-make hamburger patties and freeze them so I just drop them on the grill for dinner. I stuff some of the patties with different things - like cheeses and herbs - Greek - feta and oregano and olive; southwest - cheddar, cumin, chili powder and green chilis. the possibilities are endless!

Re: Anyone else make their own "convenience" food and freeze it?
I'm excited about the granola bar recipe, I love delicious and easy things!!!
I have done the make your own pop tarts and they were great!! The other things that I have done include all different kinds of baked meats...chicken with seasoned cereal, fish with bread crumbs, pasta dinners, soups, taquitos (the home made kind hand rolled and fried...yummy!), egg rolls, and anything else that you might see in the freezer section. I love the cookie dough ball idea but fear that I too would be snackin on the dough. I don't need my booty to grow any larger than it already is!!! That being said we bought some cookie dough from a school fundraiser about a year and a half ago and got 3 big tubs, two of them are still new with the seal. I guess I'm not as bad as I would like to tell myself (just super upset with myself right now b/c I am so fat still and DS2 is almost 1!!).
